Origin of macarons

Macarons history began in Italian monasteries in the 8th century as simple almond cookies. In the 1530s, they were introduced to France by Catherine de’ Medici. The familiar sandwich-style macaron with a creamy filling was later developed in 20th-century Paris and made famous by Ladurée, turning a basic almond biscuit into the iconic French pastry we know today.
